Then Executive Chef James Walt and his culinary brigade will prepare a six-course tasting menu demonstrating the prime ingredients of the season, drawn from the Pemberton Valley fields and pastures as well as the pristine waters of coastal British Columbia. Sommelier of the Year Samantha Rahn will pair each course with vintage treasures from the Araxi cellar – extraordinarily rare and exclusive wines gathered from around the world.
